I’m always looking to experiment with new and interesting recipes that follow my Autoimmune Reset and Gut Healing Diet. It’s finally starting to warm up, and one of my favorite things to eat during the spring and summer are tacos! One warm night last week I was really craving shrimp, but I didn’t want to just eat shrimp with a bowl of vegetables. So I created an autoimmune reset and gut healing version of tacos, and they were amazing! The cilantro and lime add so much flavor, I wasn’t even missing the tortilla! These tacos are fun, filling, and flavorful! This recipe is incredibly flexible for any diet whether you’re following an autoimmune reset and gut healing diet, paleo diet, gluten-free diet, or if you’re looking for a healthier version of tacos. Feel free to add, eliminate, or switch certain vegetables, fish, and toppings! One of the best things about tacos is the adaptability of the recipe. Have fun with the recipe and make it your own!
