While on the Autoimmune Reset and Gut Healing diet I’ve been missing the crunchiness and saltiness of chips. There aren’t a lot of easy and exciting snack options for this diet, so I’m always brainstorming new and interesting snack ideas. Kale chips are fun to eat and a great way to satisfy my salty and crunchy cravings! I really love making kale chips they are so easy, quick, and taste yummy! Kale chips are a great substitute for potato chips or any other store bought chips! Kale chips are incredibly nutritious! Kale contains vitamin A which supports healthy eyes, vitamin C which supports immune function, and vitamin K which is needed for proper blood clotting. The olive oil used to make the chips also contains heart-healthy monounsaturated fats and vitamin E, a fat-soluble vitamin with antioxidant properties. This recipe is adjustable, so have fun adding different seasonings!
